Hi Matteo,
So far it is only documented in the Acrobat PDF file that you can purchase via Kagi - there is a link on the JFreeReport page.
If anyone wants to contribute some free documentation then we'll be happy to post it here and/or on the JFreeReport project page at SourceForge.
Thomas has also put together a DTD which you can download from:

References to the DTD are also included as comments in every demo report definition. Additionally the resources directory (where the demo definitons are) contains the dtd as local copy.
