Can some one point me in the right direction for creating custom reports using the BI Suite. I downloaded the installer and installed the apps, but can only create demo reports. Any help would be greatly appreciated.

You call them demos but they aren't really are they because there aren't any limitations to what you can do with them. You may want to deploy your own version of the suite but thats a different matter, or you may want to remove/hide the current samples but thats about it really.

The BI Suite ships with a demo scenario. If you want to use it for your own needs you first need to create own datasources (for example own data-warehouse) and publish them to the BI-ApplicationServer JNDI.
Then you should hide the demo xactions in the pentaho solutions directory. You should model your own reports, mondrian cubes, data integration processes on your own/published datasources. For each of these processes you need a xaction file. A xaction file is like a deployment descriptor for the platform, without it the platform isnt able to know what to do with your file. To model xaction files pentaho offers Pentaho Design Studio.
There's a lot of documentation on the wiki about everything. Have a look at the download section to find it.
